What are my options for a different rear fender on an ACE? I'd like to convert to bullet turn signals on the chrome rails, and a smaller brake light. Will the stock fender off a different model 750 work?

Why do you need a different fender for those modds?A billski tail light will work and get longer bolts,drill a hole thru the longer bolts to mount the bullet signals.

I didn't know the billski tail light would work. I thought the bigger size of the ACE tail light would leave me with old bolt holes in my fender.

An aftermarket fender will work. Or... trim the one you've got. I bet if you ask nice, Belac can Photoshop it for you to give you an idea of how it might look (he's really good at that stuff). My .02
